Function and Scope:
Under the direction of the Bulk Food supervisor, the incumbent will prepare food while ensuring safe and sanitary food-handling practices.
Required Knowledge, Skills and Abilities:
RESPONSIBILITIES & DUTIES
1. Prepares all salads, vegetables, and desserts which do not require cooking
2. Prepares all simple desserts
3. Obtains, weighs, and measures all ingredients required for production
4. Records temperatures of all cold food products through packaging process
5. Stores all portioned products at proper temperatures
6. Maintains clean, sanitary work environment
7. Moves cold food to the distribution department
8. Pans, seasons, and steams all vegetables
9. Provides hot food assembly line with panned food; replenishes as needed
10. Records hot food temperatures
11. Assembly meals on hot and cold meal assembly lines
12. Adheres to all local, state, and federal health directives
Qualifications:
No less than twelve months of food service experience that contain the following:
1. Quantity food preparation and production skills
2. Working knowledge of HACCP Guidelines
3. Sanitation and safety practices, food handling techniques
4. Demonstrated knowledge of the use of various pieces of cooking and reheating equipment
5. Portion control – both food ingredients and serving portions
6. Demonstrated initiative, with the ability to work well independently and as part of a team.
7. Ability to read, write, and speak English
8. Self-motivated with an ability to set priorities, perform under pressure, and execute all tasks with specific
attention to detail and deadlines
