Jay Cohen is always “exploring innovative ways to enhance the mouth-watering flavors of his dishes.” On September 1, 2005, after over 20 years of experience in the restaurant industry, Jay opened the doors of Mia Carolina inviting Baltimoreans to experience his own personal take on Italian cuisine. Prior to opening Mia Carolina, Jay owned the Dolfield South Café in Owings Mills, MD. A graduate of Baltimore International Culinary College, Jay matured his expertise with several esteemed restaurants, including Linwood’s of Owings Mills, MD, the Harryman House of Reisterstown, MD, and Filomena of Washington, D.C.
