About CHEF BILL TIEN
Bill Tien is the third generation of successful restaurateurs. When he came to the United States at the age of 16, his love for fine cuisine drew him to the restaurant business. Since then, Bill has worked and owned multi cultural restaurants for more than 28 years in the Baltimore area. Bill currently owns Matsuri Japanese restaurant and catering services, true Japanese restaurant in the historic Federal Hill. Matsuri is repeatedly voted the Best Japanese Restaurant by the Baltimore Magazine and the City Paper, and has received the highest ranking from the Baltimore Sun and the Zagat’s survey. His restaurant is frequented by the sport celebrities and the political and corporate leaders. Matsuri routinely caters to the elite of Baltimore, including area businesses, country clubs, hotels, and the Baltimore Orioles. Bill is on the faculty to conduct sushi classes for the Baltimore International College and other organizations. He also serves on the governing boards of several civic and not-for-profit organizations. Bill is married and has two daughters and a son.

Shrimp and Vegetable Tempura
A classic dish made from freshest seafood and vegetable, coated in the lightest batter, and deep fried until crisp. To keep the ingredients fresh and the batter crisp, prepare and cook as quickly as possible.
1. Tempura Batter:
1 1/4 cups all purpose flour, 1 egg and mixed with cold water.
2. Tempura sauce:
1/2 oz dried bonito flakes
1 cup water
1/4 cup mirin
1/4 light shoyu
1 cup grated daikon to serve
3. Select shrimp and seasonal vegetable:
4. Heat the oil, temperature to 300-350 degree F.
5. Dip the shrimp and vegetable in flour, then dust of the excess. Dip in the batter and slide gently into the hot oil, When the shrimp and vegetable turn to a crispy golden color then drain.
6. Arrange the tempura on a serving plate. Pour the tempura sauce into serving bowl and place a small amount of grated daikon in the center. Serve immediately. Dip the tempura in the sauce before eating.
